Equipment

Ingredients

  • 2 oz Lyre's White Cane
  • 1 oz Fresh lime juice
  • 2 tbsp Cane sugar
  • 10-15 Mojito mint leaves plus additional for garnish
  • 2-4 oz Chilled club soda
  • 1 sprig Mojito Mint (for garnish)

Instructions

  • Add fresh lime juice and cane sugar into a cocktail shaker and muddle until the sugar is almost dissolved. Add mint leaves and muddle again gently. Be careful not to rip the leaves into pieces. A quick and gentle muddle is enough to release the flavor.
  • Add Lyre's and ice cubes to the shaker and shake for 10 to 12 seconds.
  • Fill a Highball glass with crushed ice and mint leaves. Slap or press the leaves before adding them to release their fragrant aromas.
  • Strain the mocktail in the glass and top it with chilled soda water.
  • Add more crushed ice and garnish with a sprig of mint.

Notes

For a Mojito Mocktail pitcher, use the following proportions:
Ingredients:
  • 16 oz Lyre's white cane
  • 8 oz Lime juice
  • 60-80 Fresh mint leaves
  • 2 ounces of Cane sugar syrup or Demerara syrup
  • 24 ounces of Sparkling water (club soda)
  • 1 Mint sprig and 1 slice of lime per serving
How to make the pitcher:
  1. Add Lyre's, cane syrup, and lime juice into your pitcher. 
  2. Slap the mint leaves before adding them to the other ingredients and gently muddle and mix all the ingredients.
  3. Store the pitcher in the fridge for at least 3-4 hours before using.
  4. Fill glasses halfway with crushed ice, pour one serving, add more crushed ice, and top up with chilled soda water.
  5. Garnish with mint sprig and lime slice.
